Unsaturated fatty acids are known to be beneficial in the 
prevention of cardiovascular diseases.  Polyunsaturated 
fatty acids reduce harmful LDL cholesterol.  Monounsaturated
 fatty acids regulate the balance of lipoproteins, increase
 bene"cial HDL cholesterol, reduce harmful LDL cholesterol, 
and decrease the build-up of cholesterol in general.
They a#ect the composition of cell membranes and the 
functioning of receptors. The metabolic products of dietary 
unsaturated fatty acids serve as key signaling agents 
modulating the behavior of immune cells, such as 
macrophages, neutrophils, T-cells, and B-cells.
